While Colorado isn’t exactly home to the tropical cacao seeds from which chocolate is made, it’s certainly home to some incredible chocolatiers. This month, German-born Erich Dietrich of Dietrich’s Chocolate & Espresso, the area shop that chocolate-makers swear by, will be making your valentine a five-ounce, flat chocolate heart that is dotted with a trio of truffles flavored with Grand Marnier, amaretto, and raspberry ($8; dietrichschocolate.com). Across town, Ellyngton’s at The Brown Palace Hotel is offering a chocolate-themed brunch every Sunday of the month, including February 14, of course. The extensive menu includes entrées such as venison with chocolate and black cherries and chicken queso fresco ravioli with an Aztec chocolate sauce; more than 20 chocolate-focused desserts, including a chocolate caramel torte and a milk chocolate–ginger gâteau; and elaborate chocolate sculptures. One of the 40-pound works of art will show chocolate in all its stages, as executive pastry chef James Gallo says, “from bean to bar” (brunch, $57; brownpalace.com).
